Grilling Tips

Perfect Medium-Rare Steaks ~ High heat and flames are not the way to grill a steak !! Slow cook steaks on the grill from frozen. If they are thawed, place them in the freezer for an hour before grilling. This way, the outside will get well done and the inside will stay medium rare. To slow cook those perfect steaks always cook your steaks on the grill using indirect heat. That means if you have a coal grill, move the coals to one side and place your steaks on the other side, so they are not directly over the coals. If you are using a gas grill, use one burner and place your steaks on the grill so they are not directly over the burner, or you can keep your burner on low and make sure they are not too close to the burners. If your grill has two racks, use the top one. Cover and slow cook. If you like, you can first sear the steaks on a very hot frying, pan for less than one minute per side (splash a little red wine in at the end) and then slow cook on the grill to finish.

Kabobs ~ If you like to grill kabobs, you probably have been frustrated when you go to turn them over and the food on the kabobs don't cooperate. If you double skewer the food on the kabobs they will turn properly when they are turned over. Oh yes, remember to soak the wooden kabobs before grilling for about 30 minutes so they don't catch on fire while on the grill !

Grilling Corn ~ Remove the husks from the corn, clean the corn and place the corn back into the husk. Soak the corn while in the husk in water for 20-30 minutes and then place the corn (still in the husk) on the grill, turning occasionally for about 25 minutes. By soaking the corn in water, you will be steaming the corn and it will cook very tender and not dry out.
